Sweet Potato Casserole Recipe With Pecan Topping

Sweet potato casserole is a quintessential Thanksgiving dish, bringing warmth and sweetness to the holiday table. The combination of creamy mashed sweet potatoes and a crunchy pecan streusel topping is simply irresistible. While the casserole is often associated with Thanksgiving, it’s a versatile dish that can be enjoyed throughout the year.

Ingredients:

For the Sweet Potato Filling:

  • 4 pounds sweet potatoes, peeled and cubed
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the Pecan Streusel Topping:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup chopped pecans

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Prepare the Sweet Potato Filling: In a large pot of boiling water, cook the sweet potatoes until tender, about 20 minutes. Drain and return to the pot.

  3. Using a potato masher or electric mixer, mash the sweet potatoes until smooth.

  4. Stir in the melted butter, granulated sugar, brown sugar, milk, eggs, vanilla extract, and salt until well combined.

  5. Transfer the sweet potato mixture to a greased 9×13-inch baking dish.

  6. Prepare the Pecan Streusel Topping: In a medium bowl, cream together the softened butter and brown sugar until light and fluffy.

  7. Beat in the flour and cinnamon until the mixture resembles coarse crumbs.

  8. Stir in the pecans.

  9. Sprinkle the pecan streusel topping evenly over the sweet potato mixture.

  10. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.

  11. Let the casserole cool slightly before serving.

Tips:

  • For a richer flavor, use evaporated milk instead of regular milk.

  • If you prefer a spicier casserole, add a pinch of nutmeg or ginger to the sweet potato filling.

  • For a crunchier topping, use chopped walnuts or almonds instead of pecans.

  • Serve the sweet potato casserole with marshmallows or whipped cream for an extra indulgence.

Enjoy your delicious homemade sweet potato casserole!
